OK, so now I'll scare you.

If you're vegan, you can use any pickling recipe to preserve cubed firm or
extra-firm tofu.

You can even make it super spicy wih garlic cloves and well-washed Thai
chilis in the jar.
It's great rolled in a pita or flatbread with greens and shreddded
carrots and hummus or tahini.
